Add 1 tsp of tea to a teapot. Pour in 200 ml of water boiled to 85 – 90°C. Steep for 2 – 3 min. Strain into cup. Enjoy as is or sweeten to taste.
Brew it the traditional Chinese way
To fully appreciate the tea, brew in gongfu style using a gaiwan teapot, tea boat and specialised utensils. Boil freshly drawn ambient water in a teakettle to 85 – 90°C;. Warm the gaiwan by rinsing with the hot water and discard into the tea boat. Add 2 tbsp of tea to the gaiwan. Next, flash rinse the tea leaves by swirling hot water along the inner side of the gaiwan, ending the stream in the centre. Immediately discard water into the tea boat while using the lid to retain the leaves. Refill the gaiwan with hot water and cover. Steep for 6 sec then stir the tea using the lid to evenly distribute the flavour. To serve, strain into a warmed tea pitcher and pour evenly into warmed tea cup/s or drink straight from the gaiwan. Savour the aroma from the lid before drinking. Can be served with milk or a slice of lemon. Enjoy as is or sweeten to taste. Can be re-infused up to 2 times, slightly increasing the steeping time with each infusion.
