How to Brew the Traditional Turkish Way

  1. Measure

    You will need 1 tbsp of tea per cup (250 ml / 8.5 fl oz) of water. For best results, use freshly drawn ambient filtered water.

    Add an extra ¼ cup (62.5 ml / 2 fl oz) of water per cup of tea to allow room for evaporation and the amount of water that will be absorbed by the apples during the brewing process.

  2. Brew

    Add the water to your saucepan, followed by the tea. If sweetening with sugar, add it now so it can simmer with the tea and unleash its hidden magic.

    Note: Adding sugar at the start of the brew is your ticket to a truly enchanting cup. This simple step allows the sugar to play with the apple and aromatic spices, creating a harmonious blend infused with warmth and richness. Melded with sweetness in the brew, the spiced notes are more pronounced, balanced, and complex. It's a subtle magic that elevates every sip.

    Cover and bring to a rolling boil on the stovetop. Reduce the heat and gently simmer for 3 – 5 min or until the liquor develops a rich golden colour.

  3. Serve

    Whether you will be sharing your tea with others or enjoying it solo, you can pour directly into the teacups or transfer the brew to a teapot first. Either way, strain it through a mesh strainer to prevent the apple pieces from flowing out. Squeeze the apples with the back of a spoon to ensure you get every flavourful drop. Hint: for a magical apple-pie-in-a-cup experience, pop the strainer aside and allow some apple pieces to flow into each cup. The dried apple pieces will be juicy and thick with tea, and each one is its own little treat. If you didn’t add sugar to the brew, you can add it now, allowing everyone to sweeten their tea to taste. This is also the right time to add honey or any alternative sweetener. Feel free to add a traditional touch of tanginess by popping a lemon slice in each cup.

    Note for honey lovers: Let your tisane cool a little before drizzling in your favourite bee-made treat. Hot water can rob honey of its health benefits and unique flavour. However, honey dissolves beautifully in a slightly cooled brew and holds onto all its beneficial properties. So, for a nourishing tisane, let it cool for a moment before you bring honey into the mix.

  4. Drink

    If you are drinking from a traditional tulip cup, ensure you hold the cup from the rim using your thumb and index finger so that you do not burn yourself. The genius of the tulip cup design is that it is shaped in the shape of a tulip, with an outward-curving mouth to protect the drinker’s hands from the heat.

    Before taking your first sip, savour the aroma of the tea in the teacup to experience greater depths of flavour. Want to make a big batch of tea to fill a glass jug or pitcher?

In this case, it’ll be easier to prepare a tea concentrate first. Follow the Quick Brew steps, adding the amount of tisane you’ll need for the total volume of your jug or pitcher. However, instead of adding the full amount of water, only add 500 ml (8.5 fl oz) per litre (34 fl oz) of iced tea you’re making. After straining the concentrate into your vessel and sweetening to taste, simply top it up with the remaining volume of ambient water.
