If you aren’t a fan of sugar, replace it with your natural sweetener of choice (just ensure it’s melted into the brew while it’s still hot). For a traditional touch, add a squeeze of lemon, and add a new twist to each brew by infusing it with different seasonal fruits.

Brewing Guide

  • AMOUNT

    1 – 2 tsp per cup

    100°C (210°F)

    Steep 3 – 5 min

Add ½ cup of water to a saucepan. Bring to a rolling boil. Add sugar to taste (optional). Add 1 – 2 tsp of tea. Boil for 1 min. Remove from heat. Steep for 3 – 5 min. Strain into cup. Top with ½ cup of ambient water. Serve chilled over ice.

Brew it the traditional American way

To make 1 L pitcher of iced tea, add 1 cup of freshly drawn ambient water to a saucepan. Bring to a close boil - heat water to just under 100°C;. If sweetening, add the sugar at this point to ensure it dissolves. Southern Americans love their tea really sweet! Now bring the water to a rolling boil. Add 2 tbsp of tea. Boil for 1 min. Remove from heat. Add a pinch of bicarb soda (optional step to prevent the tea from clouding). Steep for 3 – 5 min. Strain into glass jug or tea pitcher. Top with 3 cups of freshly drawn ambient water. To serve, squeeze a wedge of lemon into your cup, fill to brim with ice and pour the tea. Best served in a tall glass cup or mason jar. Garnish with round lemon slices and a few sprigs of fresh mint for an extra refreshing kick. Perfect for keeping in the fridge for guests. To add a new twist try combining with your favourite seasonal fruit.
